Ingredients
2 Sweet Potatoes (peeled and cut into fries)
1 Tbsp Extra Virgin Olive Oil or Avocado Oil
1 tsp Chili Powder
To Taste Salt and Pepper
1 can Black Beans (rinsed and drained)
2 Scallions (sliced)
1 cup Cherry Tomatoes (halved)
1 cup Shredded Mexican Cheese
1 Avocado (diced)
1 Squeeze Bottle Creamy Garlic Bitchin' Sauce
1 Squeeze Bottle Chipotle Bitchin' Sauce
Method
  1. Preheat the oven to 425 degrees
  2. Toss the sweet potato fries in olive oil, chili powder, salt, and pepper. Spread them out in an even layer on the baking sheet. Bake for 40 minutes, flipping halfway through
  3. Prep the toppings while the fries cook: Drain and rinse the beans, slice the scallions, half the tomatoes, and dice the avocado. 
  4. When the fries are finished baking, top them with the beans, scallions, and tomatoes. Sprinkle the cheese on top. Put them back in the oven for about 5 minutes until the cheese is melted.
  5. Top with avocado, cilantro, Creamy Garlic Bitchin’ Sauce, and Chipotle Bitchin’ Sauce
